Serves: 12-15
  • 100g self-raising flour
  • 50g desiccated coconut
  • pinch of salt
  • 100g butter
  • 100g caster sugar
  • 2 eggs, beaten
  • 1-2 tbsp milk
  1. Preheat the oven to 180C/Gas 4. Place 12-15 paper cake cases on a baking tray. In a mixing bowl, cream the butter with the sugar until light and fluffy, beat in the eggs and milk. Gently fold in the flour, desiccated coconut and salt. Divide the mixture between
