As those who have ever attended the school PTA summer fayre and come away feeling just a little green about the gills are aware, there are barbecues, and there are barbecues.

Simon Walsh, head chef at No19 at Close House, recommends the summer lunch barbie should be kept simple, with one headline dish – in this case, a fantastic Moroccan-spiced shoulder of lamb, roasted in the oven and finished on the barbie to ensure the spices zing.

Keep your stress levels low by prepping Simon’s succulent salads early in the day and having them ready to serve, and welcome your guests with this fantastic salted pineapple salad served with a welcome drink as a zingy appetiser.
