Salted Pineapple salad with chilli, lime and coriander












1 large pineapple

1 red chilli (de-seeded and finely diced)

200g/7oz coriander

4 tbsp sea salt

juice and zest of 1 lime


Top, tail and peel the pineapple. Slice into thin discs. Season with salt, lime zest and juice. Arrange on a plate and sprinkle over the finely diced chilli and coriander leaves.
