Coconut lentil curry soup
 
Serves: 4
Ingredients
  • 1 tbsp oil
  • 1 onion, chopped
  • 2 cloves garlic, chopped
  • 2 sticks celery
  • 1 sweet potato, peeled and chopped
  • 1 potato, peeled and chopped
  • 1 tbsp curry powder
  • 150g red lentils
  • 1.2 litres vegetable stock
  • 400ml low fat coconut milk
  • 2 tbsp fresh coriander, chopped
  • juice of ½ a lemon
Method
  1. Heat the oil then sweat the onion. Add garlic, celery, potato and cook for 3 mins. Stir in curry powder, lentils and then the vegetable stock. Cook covered until the lentils and vegetables are very soft (25 mins). Add coconut milk, coriander, lemon juice and blend.
