Coconut lentil curry soup
Serves: 4
Ingredients
- 1 tbsp oil
- 1 onion, chopped
- 2 cloves garlic, chopped
- 2 sticks celery
- 1 sweet potato, peeled and chopped
- 1 potato, peeled and chopped
- 1 tbsp curry powder
- 150g red lentils
- 1.2 litres vegetable stock
- 400ml low fat coconut milk
- 2 tbsp fresh coriander, chopped
- juice of ½ a lemon
Method
- Heat the oil then sweat the onion. Add garlic, celery, potato and cook for 3 mins. Stir in curry powder, lentils and then the vegetable stock. Cook covered until the lentils and vegetables are very soft (25 mins). Add coconut milk, coriander, lemon juice and blend.
