Scandi apple cake
Serves: 6
  • 2 eggs
  • 225g caster sugar
  • 100g butter
  • 150ml full-cream milk
  • 175g plain flour
  • 3 tsp baking powder
  • 3-4 apples, quartered and cored, skins on
  1. Pre-heat the oven to 200C/Gas 6. Grease and flour a 20cm x 30cm roasting tin. Whisk the eggs and 200g of the sugar in a bowl until thick and creamy. Put the butter and milk in a saucepan, bring to the boil and stir into the egg and sugar mix. Sieve in the flour and baking powder and fold carefully into the batter. Pour into the roasting tin. Quarter, core and slice and apples and arrange over the batter. Sprinkle with remaining sugar and bake for 20-25 mins until risen and golden. Cool in the tin, then cut into slices.
