Matcha cookies
  • 115g butter at room temp
  • 150g caster sugar
  • 2 tbsp matcha green tea powder, sifted
  • 1 egg
  • ½ tsp vanilla extract
  • 190g plain flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 75g chopped pistachios walnuts or white chocolate, if desired
  1. Preheat oven to 180C/Gas 5 and line a baking tray with greaseproof paper.
  2. Place butter and sugar in a bowl and cream together with a wooden spoon. Mix in the sifted matcha tea powder, add the egg and vanilla extract and mix.
  3. Sieve the flour, baking soda and salt over the butter-sugar mixture and fold in gently. Stir in the nuts or chocolate.
  4. Scoop dough between two dessertspoons and place on baking trays, leaving space between for cookies to expand. Bake for 8-10 mins, cool for 5 mins on the tray and transfer to a wire rack to cool. Serve when cool with Earl Grey or green tea.
