Matcha cookies
Ingredients
- 115g butter at room temp
- 150g caster sugar
- 2 tbsp matcha green tea powder, sifted
- 1 egg
- ½ tsp vanilla extract
- 190g plain flour
- ½ tsp baking soda
- ¼ tsp salt
- 75g chopped pistachios walnuts or white chocolate, if desired
Method
- Preheat oven to 180C/Gas 5 and line a baking tray with greaseproof paper.
- Place butter and sugar in a bowl and cream together with a wooden spoon. Mix in the sifted matcha tea powder, add the egg and vanilla extract and mix.
- Sieve the flour, baking soda and salt over the butter-sugar mixture and fold in gently. Stir in the nuts or chocolate.
- Scoop dough between two dessertspoons and place on baking trays, leaving space between for cookies to expand. Bake for 8-10 mins, cool for 5 mins on the tray and transfer to a wire rack to cool. Serve when cool with Earl Grey or green tea.
