Mark Hix’s beetroot salad with smoked anchovies

Ingredients
- 500g cooked beetroot
- 2 shallots, finely chopped
- 1 tbsp chives, chopped
- ½ tbsp white wine vinegar
- 3 tbsp olive oil
- salt and pepper
- 1 can smoked anchovies, drained
Method
- Cut beetroot into 5mm slices and lay on plates or a serving dish. To make the dressing, mix together the remaining ingredients apart from the anchocies and spoon it over the beetroot. Arrange the anchovies on top.
