Mark Hix’s beetroot salad with smoked anchovies

Ingredients
  • 500g cooked beetroot
  • 2 shallots, finely chopped
  • 1 tbsp chives, chopped
  • ½ tbsp white wine vinegar
  • 3 tbsp olive oil
  • salt and pepper
  • 1 can smoked anchovies, drained
Method
  1. Cut beetroot into 5mm slices and lay on plates or a serving dish. To make the dressing, mix together the remaining ingredients apart from the anchocies and spoon it over the beetroot. Arrange the anchovies on top.
