Mackerel rillettes
Ingredients
- Liquor:
- 1 litre water
- 1 bouquet garni
- 1 lemon cut in half
- 1 large carrot, chopped
- 1 onion, chopped
- Mackerel:
- 4 fresh mackerel
- 100g crème fraîche
- juice of 1 lemon
- 1 tsp dijon mustard
- chives
- salt and pepper
Method
- Boil the liquor ingredients for 20 mins.
- Leave to cool then pass through a sieve.
- Bring the liquid to a simmer and poach the mackerel for 4 mins.
- Remove the mackerel and as much skin as you can.
- Shred the flesh with a fork and add the crème fraîche, lemon, mustard, chives, and salt and pepper.
- Leave covered in fridge for 24 hours.
- Spread onto a toasted baguette.
