Mackerel rillettes
 
Ingredients
  • Liquor:
  • 1 litre water
  • 1 bouquet garni
  • 1 lemon cut in half
  • 1 large carrot, chopped
  • 1 onion, chopped
  • Mackerel:
  • 4 fresh mackerel
  • 100g crème fraîche
  • juice of 1 lemon
  • 1 tsp dijon mustard
  • chives
  • salt and pepper
Method
  1. Boil the liquor ingredients for 20 mins.
  2. Leave to cool then pass through a sieve.
  3. Bring the liquid to a simmer and poach the mackerel for 4 mins.
  4. Remove the mackerel and as much skin as you can.
  5. Shred the flesh with a fork and add the crème fraîche, lemon, mustard, chives, and salt and pepper.
  6. Leave covered in fridge for 24 hours.
  7. Spread onto a toasted baguette.
