Lamb shish kebab

Ingredients
  • For the kebab
  • 2 medium onions
  • 50g cloves garlic, chopped
  • 50g fresh ginger, chopped
  • 450g lamb mince
  • 2 tbsp chopped coriander
  • 2 tbsp green chillies
  • 1 tbsp garam masala
  • ¼ tsp chilli powder
  • ½ tbsp paprika powder
  • 2 tbsp chopped mint (optional)
  • To serve
  • vegetable oil for frying
  • 2 onions, chopped
  • ½ red pepper, chopped
  • ½ green pepper, chopped
  • salt and black pepper to taste
Method
  1. Blitz onions, ginger and garlic in a food processor until fine but not liquefied.
  2. In a mixing bowl, add the onion mixture, lamb mince and remaining kebab ingredients.
  3. Mix well and refrigerate for 2 hrs.
  4. Remove from fridge, shape and wrap around flat-sided skewers or shape into long sausage shapes.
  5. Barbecue until cooked through.
  6. Meanwhile, heat oil in a frying pan or griddle and fry onions and peppers until charred around the edges.
  7. Season and serve with the kebabs on a heated platter.
