Chicken kebabs
Serves: 4
  • 125g natural yoghurt
  • 1 lemon, juice
  • 2 tbsp olive oil
  • 1 tbsp grated fresh ginger
  • 2 tsp salt
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • 2 cloves garlic, minced
  • 1 tsp black pepper
  • ½ tsp cumin
  • ½ tsp cayenne pepper
  • 500g chicken chunks
  • 3 large apples
  • 1 small red chilli, de-seeded and finely diced, to garnish
  • coriander leaves, to garnish
  1. Whisk together yoghurt, lemon juice, olive oil, ginger, salt, smoked paprika, chili powder, garlic, black pepper, cumin and cayenne pepper.
  2. Place chicken in a large resealable plastic bag.
  3. Pour in marinade, seal bag and refrigerate 4-8 hours.
  4. Thread chicken and apple onto skewers, brush with marinade and grill/BBQ until browned.
  5. Garnish with chilli and coriander leaves.
