Baked pumpkin with chili and thyme
Serves: 4
  • 1 pumpkin
  • 1 tbsp melted coconut oil
  • 1 red chili, de-seeded and thinly sliced
  • 3 sprigs fresh thyme
  • salt and ground black pepper
  1. Preheat oven to 200C/Gas 6.
  2. Cut pumpkin in half and scoop out the seeds and stringy bits.
  3. Cut into thin slices, toss with coconut oil, salt, pepper, chilli and thyme, and arrange in one layer on a baking tray lined with greaseproof paper.
  4. Bake for 30 mins, serve.
