Northumberland’s game is some of the best in the UK – just ask Close House head chef Craig Harvey, whose menus are packed with seasonal game, some of it shot by Craig himself and all of it sourced from the county. On our last visit, we enjoyed this roast pheasant served with roast parsnip fondant.
