Pear Butter
 
Ingredients
  • 2kg ripe pears
  • 400g (approx.) sugar
  • 1 tsp grated orange zest
  • ¼ tsp ground nutmeg
  • 4 tbsp orange juice
Method
  1. Peel, core and roughly chop the pears.
  2. If they are firm, put them in a bowl with 4tbsp water and microwave on high for 5-10 mins or until soft.
  3. If soft already, do not pre-microwave.
  4. Weigh pears and add to a pan with ⅓ of their weight in sugar and stir over a medium heat until the sugar dissolves.
  5. Add the orange zest, nutmeg and orange juice and cook over medium heat until the mixture begins to thicken, stirring often so that it doesn’t burn on the bottom.
  6. This will take 45-60 mins.
  7. Alternatively, cook uncovered in a low oven for about 2 hours until thickened (the time is dependent on how juicy the pears are).
  8. Remove and whiz in a food processor or leave chunky.
  9. Set aside to cool and spoon into sterilised jars, leaving 2cm headspace, and seal.
