Lemon and dill salmon skewers
Ingredients
- 4 salmon steaks
- handful fresh dill
- 2 cloves garlic, chopped
- 2 lemons
- 2 tsp red pepper flakes
- sea salt and black pepper
- cooking spray
- aioli
Method
- Cut the salmon into chunks and soak 4-6 wooden skewers in water to prevent burning.
- Place the salmon in a mixing bowl. Add half the dill, the garlic, the juice of half a lemon, red pepper flakes, and freshly ground salt and pepper. Toss until the fish is coated and put in the fridge to marinate for 20 mins.
- Thinly slice a lemon and alternate salmon chunks and lemon slices on soaked skewers.
- Spray the barbecue grill with oil to prevent sticking and cook the skewers for 4-5 mins each side or until the fish is pink and firm.
- Remove from barbecue and serve with lemon wedges, dill and aioli
