Lemon and dill salmon skewers

Lemon and dill salmon skewers

Ingredients

  • 4 salmon steaks
  • handful fresh dill
  • 2 cloves garlic, chopped
  • 2 lemons
  • 2 tsp red pepper flakes
  • sea salt and black pepper
  • cooking spray
  • aioli

Method

  1. Cut the salmon into chunks and soak 4-6 wooden skewers in water to prevent burning.
  2. Place the salmon in a mixing bowl. Add half the dill, the garlic, the juice of half a lemon, red pepper flakes, and freshly ground salt and pepper. Toss until the fish is coated and put in the fridge to marinate for 20 mins.
  3. Thinly slice a lemon and alternate salmon chunks and lemon slices on soaked skewers.
  4. Spray the barbecue grill with oil to prevent sticking and cook the skewers for 4-5 mins each side or until the fish is pink and firm.
  5. Remove from barbecue and serve with lemon wedges, dill and aioli
