Green pea and mint rolls

Ingredients
  • 200g green peas (thawed if frozen)
  • 1 tbsp Yondu vegetable umami
  • 1 tbsp olive oil
  • 1 tbsp corn starch
  • 3 spring onions, chopped
  • 5-8 mint leaves, chopped
  • freshly ground black pepper
  • 1 sheet puff pastry (250g)
Method
  1. Preheat oven to 200C/Gas 6.
  2. In a bowl, combine the green peas, Yondu and olive oil. Partially mash the peas with a fork, making sure some remain whole.
  3. Add the corn starch, spring onions, mint leaves and black pepper to the pea mixture, and stir together.
  4. Roll out the sheet of puff pastry until it is approx. 0.5cm thick.
  5. Cut the pastry into two equal pieces approx. 40cmx10cm.
  6. Divide the pea filling in half and place half down the middle of each sheet of pastry.
  7. Roll the pastry tightly over the filling to form a long roll.
  8. Place both rolls on a baking tray lined with a sheet of parchment.
  9. Bake in the oven for 25 mins or until puffed and golden brown.
  10. Allow to cool completely before cutting into 2-3cm segments with a serrated knife.
