Coconut Financier Cake

Ingredients
- 105g icing sugar
- 60g ground almonds
- 60g dessicated coconut
- 65g plain flour
- 2g baking powder
- 165g egg whites
- 32g honey
- 30g nutty butter (butter which has been cooked until it has a brown colour)
- butter and Demerara sugar (to coat ramekins)
Method
- Put all the dry ingredients together in a bowl. Add the egg whites, honey and nutty butter to the bowl. Take individual small ramekins and rub soft butter all around then sprinkle with
- Demerara sugar.
- Fill the ramekins to three-quarters. Bake in a preheated oven at 200C for 7-8mins.
- To serve - Place the passion fruit bavarois on the plate, add some of the fresh exotic fruit salad with some syrup and a lukewarm coconut financier.
