Caribbean Veganuary: Spiced donuts with dark chocolate sauce

Serves: Approx. 15 donuts
Ingredients
- For the donuts:
- 500g self-raising flour
- 100g cornmeal
- 100g granulated sugar
- 20g baking powder
- 15g salt
- 1 tsp cinnamon
- 150ml water
- For the sugar coating and chocolate sauce:
- 3 tsp granulated sugar
- ½ tsp cayenne pepper
- 1 tsp cinnamon
- orange zest
- 100g vegan dark chocolate
Method
- Mix the donut ingredients together and knead into a dough.
- Let the dough rest for 10 mins.
- Place the dough into a piping bag and pipe into small portions (doughballs, churros, or any shape you want).
- Place each donut into hot oil and fry for 8-10 mins.
- Remove the donuts from the oil and let them dry on a rack or kitchen roll for 5 mins.
- For the sugar coating - mix together the sugar, cayenne pepper, cinnamon and orange zest in a bowl.
- Toss the donuts in the mixture and ensure they are fully coated.
- For the chocolate sauce, melt the vegan dark chocolate and drizzle over the top of the donuts.
- Top with a little more orange zest and serve.
