British asparagus grilled cheese sandwich

Ingredients
- 4 slices sourdough bread
- soft butter
- 150g sliced cooking mozzarella, Cheddar and Gruyère
- 2tsp olive oil
- 1 bunch asparagus, washed, trimmed and blanched
Method
- Butter the bread on both sides and top each with slices of the cheese.
- Heat a large frying pan over a medium heat and add 1 tsp olive oil. Put two slices of bread in the pan cheese side up, top with blanched asparagus spears, cover and cook for 2 mins. Remove lid and sandwich the two halves together. Press down with a spatula and cook for 1 min each side until golden brown. Repeat with the second sandwich. Serve with cress, pickles or chutney.
