BBQ lamb burger
Serves: 4
Ingredients
- 450g lean lamb mince
- 25g dried apricots, finely chopped
- 25g shelled pistachio nuts or almonds, finely chopped
- 1 tbsp freshly chopped coriander or mint
- ½ lemon, grated zest and juice
- To serve:
- salad leaves, cucumber, and yoghurt with fresh mint
Method
- Mix together all the burger ingredients in a large bowl. Using slightly damp hands, shape mixture into 4 burgers. Place on a plate, cover, and refrigerate for 30 mins.
- Cook on a prepared barbecue or under a preheated grill for 8 mins or so on each side until cooked through and any juices run clear.
- Serve in burger buns with salad leaves, shaved cucumber, and a dollop of yoghurt mixed with fresh mint leaves.
