BBQ lamb burger
Serves: 4
  • 450g lean lamb mince
  • 25g dried apricots, finely chopped
  • 25g shelled pistachio nuts or almonds, finely chopped
  • 1 tbsp freshly chopped coriander or mint
  • ½ lemon, grated zest and juice
  • To serve:
  • salad leaves, cucumber, and yoghurt with fresh mint
  1. Mix together all the burger ingredients in a large bowl. Using slightly damp hands, shape mixture into 4 burgers. Place on a plate, cover, and refrigerate for 30 mins.
  2. Cook on a prepared barbecue or under a preheated grill for 8 mins or so on each side until cooked through and any juices run clear.
  3. Serve in burger buns with salad leaves, shaved cucumber, and a dollop of yoghurt mixed with fresh mint leaves.
