Dabbawal bhel puri

Ingredients
- 4 cups puffed rice (kurmura)
- 1 cup sev (crunchy noodle bits, available at Asian grocers)
- 20 papadi (crisp savoury discs, available at Asian grocers)
- ½ cup chopped onions
- ½ cup boiled potatoes, chopped
- 8 tbsp tamarind chutney
- 4 tbsp green chutney
- 1 tsp black salt (sanchal)
- ½ tbsp lemon juice
- Salt to taste
- For the garnish
- 8 papadi, crushed
- 1 tbsp finely chopped mango
- 4 tbsp sev
- 2 tbsp chopped coriander
- handful pomegranate seeds
Method
- Combine all the ingredients in a large bowl and toss gently until well mixed. Divide into 4 portions and garnish with the papadis, mango, sev, pomegranate seeds, and coriander. Serve immediately.Courtesy of Dabbawal
