Dabbawal bhel puri

Ingredients
  • 4 cups puffed rice (kurmura)
  • 1 cup sev (crunchy noodle bits, available at Asian grocers)
  • 20 papadi (crisp savoury discs, available at Asian grocers)
  • ½ cup chopped onions
  • ½ cup boiled potatoes, chopped
  • 8 tbsp tamarind chutney
  • 4 tbsp green chutney
  • 1 tsp black salt (sanchal)
  • ½ tbsp lemon juice
  • Salt to taste
  • For the garnish
  • 8 papadi, crushed
  • 1 tbsp finely chopped mango
  • 4 tbsp sev
  • 2 tbsp chopped coriander
  • handful pomegranate seeds
Method
  1. Combine all the ingredients in a large bowl and toss gently until well mixed. Divide into 4 portions and garnish with the papadis, mango, sev, pomegranate seeds, and coriander. Serve immediately.Courtesy of Dabbawal
