Vegan burger with courgette fries
Ingredients
- 100g red quinoa
- 240ml water
- 100g fresh beetroot, grated
- 150g cooked kidney beans, mashed
- 1 egg yolk
- 30g ricotta cheese, drained
- 2 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
- 75g rolled oats
- ½ tsp sea salt
- ¼ tsp ground pepper
- 1 tsp wholegrain mustard
- 1 tsp sweet smoked paprika*
- ¼ tsp ground cumin
- ¼ tsp ground coriander
- 1 tsp olive oil
- For the fries
- 1kg courgettes
- 1 tsp hot smoked paprika*
- 100g grated (vegetarian) Parmesan
- 6 tbsp medium cornmeal
- ½ tsp salt
- 1 tsp garlic powder
- 2 egg whites
- 1 tbsp olive oil
- For the guacamole sauce
- 1 avocado, peeled and cubed
- 1 tbsp chopped parsley
- 2 tbsp lemon juice
- 1 garlic clove, minced
- ½ tsp hot smoked paprika
- ½ tsp salt
- To serve
- 4 burger buns
- 2 small tomatoes, sliced
- 1 small red onion, sliced
- 8 lettuce leaves

Method
- Preheat oven to 180C/Gas4.
- Put the quinoa in a sieve, rinse under cold water and soak for 10 mins.
- Drain, put in a pan, add the water, bring to the boil, cover, and simmer for 15-20 mins or until the water is absorbed.
- Fluff with a fork.
- In a bowl mix the beetroot, quinoa, beans, egg yolk, ricotta, garlic, parsley, oats, salt, pepper, mustard, sweet paprika, cumin and coriander.
- Divide mixture into four balls.
- Place balls on a baking tray lined with greaseproof, flatten them, brush with 1tsp olive oil and bake for 15 mins.
- For the fries, peel courgettes, halve lengthwise, remove seeds, and slice.
- Combine hot smoked paprika, Parmesan, cornmeal, salt and garlic in a pie plate. Beat egg whites in another pie plate.
- Line a large baking sheet with greaseproof.
- Dip courgette into egg whites, then press into the cheese and corn mix.
- Place courgettes on the baking sheet, brush with olive oil and bake for 20 mins or until golden brown.
- Add the guacamole ingredients to a bowl and coarsely mash with a fork.
- Set aside. When cooked, put the burgers in the buns with guacamole sauce, tomato slices, onions and lettuce and serve with the fries.
