The Hart family have used this recipe at home for New Year’s Day for as long as I can remember. The only problem is that it never gets made the same way twice! Last year it was something like this…

The Hart family’s what’s left pudding

Ingredients
  • a mixture of leftover or stale croissants, brioche and bread
  • leftover Christmas pudding and/or Christmas cake (with icing)
  • leftover mincemeat
  • 1200ml custard
  • 300g double cream
  • butter, for greasing the dish
Method
  1. Preheat the oven to 170C/Gas3.
  2. Butter a large rectangular casserole dish.
  3. Tear apart the leftover breads, croissants etc. and fill the dish.
  4. Chop the cake and pudding into small cubes and place in and around the other leftovers then dollop mincemeat around the dish.
  5. Mix the cream with the custard and pour over the top.
  6. Bake for approx 30 mins.
  7. Serve with cream or ice cream and as soon as you’ve finished this dessert make your New Year’s resolution.
