Spring onion rarebit
Serves: 2
  • 120g Godminster cheddar, grated
  • 1tsp English mustard
  • 1 egg yolk
  • 4 spring onions, sliced
  • 30g butter
  • 30g plain flour
  • 100ml beer or stout
  • 100ml milk
  • 4 slices sourdough bread
  • 2 spring onions, sliced in half lengthways, to serve
  • salt and black pepper
  1. Mash together the cheese, mustard, egg yolk, spring onions and a grind of black pepper.
  2. In a saucepan, melt the butter then stir in the flour and cook for 1 min, stirring continuously.
  3. Gradually pour in the stout then the milk, stirring continually until incorporated, then add the cheese mixture and continue to stir until melted and smooth.
  4. Set aside.
  5. Heat the grill and line the grill pan with foil.
  6. Toast the bread on both sides then cover with the cheese mixture.
  7. Grill until bubbling and browned.
  8. Top with half a spring onion and serve with beetroot relish and your favourite beer.
