Mixed tomato salad with smoked sardines

Ingredients
- 500g tomatoes (a mix of different varieties and colours)
- 4 smoked sardine fillets
- 1 pinch Maldon salt
- 4 tbsp extra virgin olive oil
- 1 tbsp sherry vinegar
Method
- After washing and drying the tomatoes, chop each variety to a different size and thickness to make the salad more visually appealing. Season with a pinch of Maldon salt.
- To serve, place the tomato salad on a large serving plate, drizzle over olive oil and sherry vinegar, and top with the sardine fillets.
