Japanese-style pork tomahawk

Ingredients
  • 4 tbsp soy sauce
  • 2 tbsp mirin
  • 2½ tbsp granulated sugar
  • 2 tsp sesame oil
  • 1 clove garlic, peeled and chopped
  • 1 ½ tsp roasted and ground white
  • sesame seeds
  • ½ tsp whole roasted white sesame seeds
Method
  1. In a small saucepan, combine the soy sauce, mirin, sugar, sesame oil and garlic. Heat over a medium to high heat until the sugar dissolves - approx. 3 mins. Stir constantly to help the sugar dissolve and prevent burning.
  2. Allow the sauce to cool for 5-10 mins. Pour the sauce through a strainer and into a small bowl to separate and discard the garlic.
  3. Add the ground and whole sesame seeds to the strained sauce. Mix gently. Leave to cool before using (this can be stored in an airtight container for 5-7 days in the fridge).
  4. Marinade the pork tomahawks with the sauce for approx. 1 hour, then grill for 3-5mins on both sides before serving with rice and steamed veg.
