I’ve been trying out a lot of versions of this recently and you don’t really need a recipe, just ideas. A couple of my favourite versions both start with some buttered sourdough toast, sliced avocado, a fried egg, wilted spinach cooked in the same pan, a dollop of live yoghurt, a drizzle of harissa and some coriander leaves. Leave out the coriander, add some crispy bacon or a bit of salt beef, perhaps some salmon and dill, or feta and pesto, the combinations
are endless…
