Candied spiced nuts
Ingredients
- 65g dark-brown sugar
- 120g white granulated sugar
- 1½ tsp salt
- ¼ tsp smoked paprika
- 1 tsp ground cinnamon
- 450g walnut or pecan halves or whole peeled hazelnuts
- 1 egg white
- 1 tbsp water
Method
- Preheat oven to 150C/Gas 2.
- Mix sugars, salt, paprika, and cinnamon, making sure there are no lumps; set aside.
- Beat egg white and water until frothy but not stiff.
- Add the nuts, and stir to coat evenly.
- Sprinkle nuts with sugar mixture, and toss until evenly coated.
- Spread the sugared nuts in a single layer on a baking tray lined with greaseproof.
- Bake for 30 mins, stirring occasionally.
- Remove from oven and separate nuts as they cool.
- When completely cool, pour the nuts into a bowl, breaking up any that stick together.
