Candied spiced nuts
  • 65g dark-brown sugar
  • 120g white granulated sugar
  • 1½ tsp salt
  • ¼ tsp smoked paprika
  • 1 tsp ground cinnamon
  • 450g walnut or pecan halves or whole peeled hazelnuts
  • 1 egg white
  • 1 tbsp water
  1. Preheat oven to 150C/Gas 2.
  2. Mix sugars, salt, paprika, and cinnamon, making sure there are no lumps; set aside.
  3. Beat egg white and water until frothy but not stiff.
  4. Add the nuts, and stir to coat evenly.
  5. Sprinkle nuts with sugar mixture, and toss until evenly coated.
  6. Spread the sugared nuts in a single layer on a baking tray lined with greaseproof.
  7. Bake for 30 mins, stirring occasionally.
  8. Remove from oven and separate nuts as they cool.
  9. When completely cool, pour the nuts into a bowl, breaking up any that stick together.
