Ultimate breakfast pick me up
Priya Tew’s perfect powerhouse breakfast with a hit of antioxidants is balanced, nutritious and easy to make. All it takes is two slices of sourdough, toasted to your liking and topped with power foods – avocado (packed with fibre), spinach (a great source of iron) and cherry tomatoes (rich in Vitamin C).
  • ½ avocado
  • 1 lime, juice
  • Black pepper
  • 2 eggs
  • 8 cherry tomatoes, halved
  • Spinach, handful
  • 2 slices of sourdough, toasted
  1. In a bowl, mash the avocado with a squeeze of lime juice and a pinch of black pepper.
  2. Scramble two eggs in a pan.
  3. Spread the sourdough toast with the avocado mixture – then top with the scrambled egg, tomatoes and spinach.
  4. Serve.
