Sourdough crumpets cream cheese and caviar

Serves: 10 canapés
Ingredients
- 270g sourdough starter
- 15g honey
- ½ tsp bicarb
- To top:
- full fat cream cheese
- chopped chives
- caviar
Method
- Preheat your oven to 180C/Gas 4.
- Mix the sourdough starter and honey together.
- Arrange 10 small metal rings on a lightly oiled pan (spray is best for a light film of oil) and place over a medium heat to warm.
- Stir the bicarb into the sourdough and honey mix.
- Spoon into the heated rings. When small bubbles start to form on the surface of the crumpets, flip them (keeping them in the rings).
- Remove the pan from the heat and place in the preheated oven to bake for 3 mins.
- Remove from the oven and allow to cool in the rings.
- When cool, serve spread with cream cheese, chopped chives and a dollop of caviar.
