Sourdough crumpets cream cheese and caviar
Serves: 10 canapés
  • 270g sourdough starter
  • 15g honey
  • ½ tsp bicarb
  • To top:
  • full fat cream cheese
  • chopped chives
  • caviar
  1. Preheat your oven to 180C/Gas 4.
  2. Mix the sourdough starter and honey together.
  3. Arrange 10 small metal rings on a lightly oiled pan (spray is best for a light film of oil) and place over a medium heat to warm.
  4. Stir the bicarb into the sourdough and honey mix.
  5. Spoon into the heated rings. When small bubbles start to form on the surface of the crumpets, flip them (keeping them in the rings).
  6. Remove the pan from the heat and place in the preheated oven to bake for 3 mins.
  7. Remove from the oven and allow to cool in the rings.
  8. When cool, serve spread with cream cheese, chopped chives and a dollop of caviar.
