Banana & Almond Pancakes

Ingredients
- 1 banana
- 1 egg
- 50g ground almonds
- 25ml water
- ½ tsp cinnamon
- ¼ tsp gluten-free baking powder
- ½ tsp coconut oil (to fry)
- 2 tbsp sultanas
Method
- Blitz the banana, egg, ground almonds, water, cinnamon and baking powder in a food processor.
- Warm the oil to a medium heat in a pan. Dollop the pancake mixture in six portions into the pan (or in batches), adding a few sultanas to each. Fry for 1-2 mins each side. Serve as desired, or the Love Lunch way - spread with almond butter and sprinkled with pumpkin seeds and cranberries (right).
