Chef Tom Rookes and award-winning sommelier Martin Waugh are set to team up at Brinkburn in Northumberland for a new series of seasonal suppers shaped by fire, landscape, and the right quality and quantity of time.
Set in the riverside grounds of Brinkburn, the series will begin with an open-fire garden feast on June 14. Guests will gather around a fire and dine at a table beneath open skies to share food and the evening experience.
A former member of the Restaurant Pine team, Tom’s food is grounded by cooking over wood felled on the estate. The series will evolve with the seasons, beginning with the Garden Grill, which centres on a Southern American barbecue theme.
“There’s no rush here,” said Tom. “It’s about giving things the time they need, whether that’s something on the fire, a conversation, or the evening itself. Everything is thoughtful, but relaxed. You’re looked after, but free to experience it in your own way.”
Northumberland-born sommelier Martin, whose experience spans Michelin-starred restaurants in the UK and abroad, has curated a wine selection designed to move with the energy of the evening.
“The wines need to work with fire,” he said. “They need freshness and texture as much as depth; something that complements the smoke and char but also brings lift and movement throughout the meal.”
