Kale and quinoa salad

Ingredients
- 125g quinoa
- 200g torn kale leaves, washed, stems removed
- 50g red pepper, finely chopped
- ½ red onion, chopped
- 50g dried cranberries
- 50g flaked almonds
- Dressing: 4 tbsp olive oil
- 2 tbsp lemon juice
- 1 tbsp Dijon mustard
- sea salt and black pepper
Method
- Cook the quinoa according to instructions and set aside to cool.
- Blanch the kale for 1 min in boiling water, or steam in a steamer.
- Set aside to cool.
- Place all ingredients in a bowl.
- Whisk together all the dressing ingredients and pour over.
