In the kitchen, I’m listening to…
My music choices are based on the time of day. John Prine is a go to – everything is right in the world when he’s playing. I also enjoy The Avalanches on night-time prep. A firm favourite to get going is Alex Chilton’s Jumpin Jack Flash, and if we really need to push on maybe some thrash metal like Metallica’s Kill ‘Em All.
 
Over dinner, I’m listening to…
I take great pride in the playlist, probably more than the food! Although eclectic, there is a certain feel to it – leaning on classic soul and RnB for a clubby lounge atmosphere with the likes of Solomon Burke, Shuggie Otis and Aretha. We’re always adding new songs along with classic deep cuts. Some of my current favourites include Tom Jones – Lusty Lady, Dope Lemon – Rose Pink Cadillac, The Flying Stars of Brooklyn NY – My God Has A Telephone, Khruangbin – Texas Sun… it’s impossible to pick just one.
 
I’m watching…
The Bear is such a great show. It’s a breath of fresh air to see a pretty realistic portrayal of the industry, and the little nuances of kitchen life are spot on.

I’m reading…
It was a nostalgic purchase, but I’ve loved going back into The French Café Cookbook by Simon Wright. On my coffee table, you’ll find Pier by Greg Doyle – a beautiful book which takes me right back the first place I ate when I arrived in Sydney – and Eat Run Enjoy by Billy White, a fantastic book for runners or anyone looking to eat healthier.
