Kale and quinoa salad
 
 
Serves: 4
Ingredients
  • 125g quinoa
  • 200g torn kale leaves, washed, stems removed
  • 50g red pepper, finely chopped
  • ½ red onion, chopped
  • 50g dried cranberries
  • 50g flaked almonds
  • Dressing: 4 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • sea salt and black pepper
Method
  1. Cook the quinoa according to instructions and set aside to cool.
  2. Blanch the kale for 1 min in boiling water, or steam in a steamer.
  3. Set aside to cool.
  4. Place all ingredients in a bowl.
  5. Whisk together all the dressing ingredients and pour over.
