Gas 7 and line a baking tray with greaseproof paper.
Make the dough, roll out thinly and place on prepared baking tray and prick with a fork. Mix the crème fraîche and fromage blanc/Quark with the nutmeg and spread over, top with bacon and sliced onions and season with salt and pepper. Bake for 8 mins then place directly onto the oven rack and cook 3 mins further until golden and crisp. Serve with a drizzle of olive oil.
