Spinach frittata
 
 
Serves: 2
Ingredients
  • 1 tbsp olive oil
  • 3 spring onions
  • 150g fresh spinach
  • or watercress
  • 5 large eggs, beaten
  • pinch salt
Method
  1. Heat the oil in a frying pan, add the onions and spinach and stir for 2 mins, beat the eggs, pour into the pan and season. Cook over a medium heat until the egg is almost set and then finish under a hot grill for 1-2 mins.
