Spinach frittata
- 1 tbsp olive oil
- 3 spring onions
- 150g fresh spinach
- or watercress
- 5 large eggs, beaten
- pinch salt
- Heat the oil in a frying pan, add the onions and spinach and stir for 2 mins, beat the eggs, pour into the pan and season. Cook over a medium heat until the egg is almost set and then finish under a hot grill for 1-2 mins.
