Blitz the banana, egg, ground almonds, water, cinnamon and baking powder in a food processor.
Warm the oil to a medium heat in a pan. Dollop the pancake mixture in six portions into the pan (or in batches), adding a few sultanas to each. Fry for 1-2 mins each side. Serve as desired, or the Love Lunch way - spread with almond butter and sprinkled with pumpkin seeds and cranberries (right).
