Toasted tortilla
- 150g tube Primula cheese, any flavour
- 1 portobello mushroom
- 1 large flour tortilla
- 1 red chilli, de-seeded and sliced
- 2 spring onions, sliced diagonally
- pinch smoked paprika
- a drizzle of extra virgin olive oil
- handful of rocket
- Grill mushrooms 5-10 mins under a hot grill and set aside to cool.
- Preheat oven to 200C/Gas 6, place tortilla directly onto the shelf and cook for 5 mins.
- Remove from the oven, squeeze on the Primula and spread gently with the back of a spoon.
- Slice mushroom and scatter over the tortilla.
- Pop back under the grill until the cheese bubbles and is golden.
- Scatter chilli, spring onion and rocket on top then drizzle with extra virgin olive oil. Sprinkle with a pinch of smoked paprika to finish.
