1 cup sev (crunchy noodle bits, available at Asian grocers)
20 papadi (crisp savoury discs, available at Asian grocers)
½ cup chopped onions
½ cup boiled potatoes, chopped
8 tbsp tamarind chutney
4 tbsp green chutney
1 tsp black salt (sanchal)
½ tbsp lemon juice
Salt to taste
For the garnish
8 papadi, crushed
1 tbsp finely chopped mango
4 tbsp sev
2 tbsp chopped coriander
handful pomegranate seeds
Method
Combine all the ingredients in a large bowl and toss gently until well mixed. Divide into 4 portions and garnish with the papadis, mango, sev, pomegranate seeds, and coriander. Serve immediately.Courtesy of Dabbawal
