Lamb Kofta Kebabs
 
 
Makes 8 kofta kebabs

Ingredients
  • 900g lean minced lamb
  • 2 onions, finely chopped
  • 15g fresh mint leaves, finely chopped
  • 25g fresh coriander, finely chopped
  • 1 tbsp ginger paste
  • 1 tbsp chilli paste
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 2 tsp salt
  • 4 tbsp vegetable oil
  • 8 skewers
Method
  1. In a large bowl, mix the minced lamb, onions, mint, coriander, ginger paste and chilli paste.
  2. Season with the cumin, coriander, paprika, cayenne and salt. Cover and refrigerate for 2 hours.
  3. Shape the lamb mixture into sausages around the skewers.
  4. Make sure the meat is spread to an even thickness. Refrigerate until you are ready to cook.
  5. Preheat barbecue for high heat.
  6. Brush grate liberally with oil and arrange skewers on barbecue.
  7. Cook for 10 mins or until well done.
