Honey and ginger beets and mackerel
 
 
Makes 20-25
Ingredients
  • 175g smoked mackerel fillet
  • 2 tbsp Greek yogurt
  • 1-2 tsp horseradish sauce
  • small bunch chives, snipped
  • salt and black pepper
  • 20-25 mini oatcakes
  • 150g honey and ginger baby beets, cut into wedges
Method
  1. Skin mackerel and flake into a small bowl.
  2. Using a fork, mix through yoghurt, horseradish and most of the chives.
  3. Season with salt and pepper.
  4. Top each oatcake with mackerel pate and a wedge of beetroot.
  5. Sprinkle with the rest of the chives.
