Vegetable tart
 
 
Serves: 6
Ingredients
  • 300g flour
  • 125ml beer
  • 20ml olive oil
  • 5g salt
  • 1 egg, beaten
  • 4 cloves of garlic, chopped
  • 2 peppers, diced
  • 2 tomatoes, chopped
  • 1 onion, diced
  • 100g anchovies
  • handful black olives
  • salt, pepper, sugar, paprika and oregano
Method
  1. Mix together the flour, beer, oil, salt and egg, and knead into shape until it no longer has a sticky consistency.
  2. Leave to stand and then stretch a little with a rolling pin to the desired shape.
  3. Place in the oven for 15-20 mins at 180C/Gas 5.
  4. Sauté all the chopped veg together for 10 mins, adding the tomatoes halfway through.
  5. Season with salt and pepper, a little sugar and paprika.
  6. Remove tart from the oven and scatter with the sautéed vegetables.
  7. Sprinkle over some oregano, the olives and the anchovies and bake for another 20-25 mins.
