Coconut Financier Cake
 
 
Serves: 8
Ingredients
  • 105g icing sugar
  • 60g ground almonds
  • 60g dessicated coconut
  • 65g plain flour
  • 2g baking powder
  • 165g egg whites
  • 32g honey
  • 30g nutty butter (butter which has been cooked until it has a brown colour)
  • butter and Demerara sugar (to coat ramekins)
Method
  1. Put all the dry ingredients together in a bowl. Add the egg whites, honey and nutty butter to the bowl. Take individual small ramekins and rub soft butter all around then sprinkle with
  2. Demerara sugar.
  3. Fill the ramekins to three-quarters. Bake in a preheated oven at 200C for 7-8mins.
  4. To serve - Place the passion fruit bavarois on the plate, add some of the fresh exotic fruit salad with some syrup and a lukewarm coconut financier.
