Exotic Fruit Salad
- 140ml water
- 125g sugar
- ¼ fresh pineapple
- 2 kiwis
- 1 mango
- 1 papaya
- 2 fresh passion fruit
- zest of 1 lemon
- 1 star anise
- ½ vanilla pod
- Bring the water and sugar to the boil.
- Add the lemon zest, star anise and the half vanilla pod.
- Leave to cool.
- Peel and cut the fruit into small, even cubes.
- Pour the syrup on top of the fruits before serving.
