All it takes is two slices of sourdough, toasted to your liking and topped with power foods – avocado (packed with fibre), spinach (a great source of iron) and cherry tomatoes (rich in Vitamin C).

Ingredients
½ avocado
1 lime, juice
Black pepper
2 eggs
8 cherry tomatoes, halved
Spinach, handful
2 slices of sourdough, toasted
Method
In a bowl, mash the avocado with a squeeze of lime juice and a pinch of black pepper.
Scramble two eggs in a pan.
Spread the sourdough toast with the avocado mixture – then top with the scrambled egg, tomatoes and spinach.
Serve.
