Mighty veg muffins
 
 
Serves: 6
Ingredients
  • 1 small courgette, grated
  • 1 small carrot, peeled and grated
  • 3 pieces stem ginger in syrup, diced, and 3 tbsp of reserved syrup
  • 150g self-raising flour
  • 2 tsp mixed spice
  • 2 eggs, beaten
  • 150ml vegetable oil
  • 75g soft brown sugar
  • 50g chopped walnuts
  • 50g icing sugar
Method
  1. In a large bowl, mix the courgette and carrot with the ginger and 2 tbsp of the reserved syrup.
  2. Sieve the flour and mixed spice into a bowl. In a large mixing jug combine the eggs, oil and sugar.
  3. Pour the liquid mixture into the flour and combine well using a wooden spoon.
  4. Fold in the vegetable mixture and the walnuts.
  5. Preheat the oven to 170C/Gas 3.
  6. Divide mixture between muffin cases and bake for 25 mins until risen and firm to the touch.
  7. Leave to cool. When cool, mix the icing sugar with remaining syrup and drizzle over the tops of the muffins.
