25g shelled pistachio nuts or almonds, finely chopped
1 tbsp freshly chopped coriander or mint
½ lemon, grated zest and juice
To serve:
salad leaves, cucumber, and yoghurt with fresh mint
Method
Mix together all the burger ingredients in a large bowl. Using slightly damp hands, shape mixture into 4 burgers. Place on a plate, cover, and refrigerate for 30 mins.
Cook on a prepared barbecue or under a preheated grill for 8 mins or so on each side until cooked through and any juices run clear.
Serve in burger buns with salad leaves, shaved cucumber, and a dollop of yoghurt mixed with fresh mint leaves.
